Speaking of buns in the oven, we know it's nearing St. Paddy's day when our Irish Soda Bread recipe gets a workout. Thank you to the very special Maria Gibbons for handing down the authentic recipe.
4 c. flour 1 tsp salt 3 tsp baking powder 1 tsp baking soda 1/4 c. sugar 1/8 tsp. coriander 1/4 c. butter 1 egg 1 3/4 c. buttermilk
Mix dry ingredients. Add butter and cut with pastry blender until crumbly. Beat egg slightly and mix with buttermilk. Add to dry ingredients. Turn onto a floured board and knead 2-3 minutes until smooth. Divide dough in half and shape into rounded loaves. Place in greased/floured 8" cake pans. Press down. With sharp knife, cut crosses on top of loaves about 1/2" deep. Bake at 375 for 35-40 minutes. Makes 2 loaves. Serve with butter.
